I just noticed that when I use USER_ALIAS in my server, it still shows the original user in "/admins". Any way to change it there too?

Not without changing the code, but you could just give admin rights to the alias target if that's what supposed to be listed. If you log in with an alias, both the name you log in with and the aliased name count.

No. The dual use of both the alias original and target is only for the access level. For all the rest, the alias target (what's displayed in /players after you sign in) is used exclusively.
