Curry is a generic term referring to several different preparations depending on the cuisine and countless dishes in question. It generally refers to vegetables and other products in a spicy gravy, sauce, or even broth. See: Wikipedia's entry on Curry (which, of course, you could have done yourself, originally)

What authentic curry is not: That grocery store yellow curry powder. That stuff is a European invention that probably took its name from the Tamil word kari, meaning sauce. Created by 19th-century imperialist Britons returning from colonial India, it was meant to be the complete spicing for a "curry" dish. There are as many different formulas for curry powder as there are manufacturers, some mild and sweet (Bombay or Chinese style), others hot and pungent (Madras style). Typical ingredients in curry powder are black pepper, cinnamon, cloves, coriander, cumin, ginger, mace, and turmeric.

I'm not a big fan of curry, but I think that has more to do with the fact that I've only eaten it using the generic grocery-store variety curry powder. My understanding of curry is that it's a spice blend that varies depending on what someone puts in it, and that traditionally, in India anyway, the spice blends used in home cooking are built on family recipes handed down for generations. That's obviously hard to mass produce, and means there are literally millions of different curry blends available.

I'll try again when I have a recipe for a blend that looks very promising.

ugh luci, you haven't had real curry then :)

erm, if you can't make it yourself, go get a cook book, look at the different varieties, find one that makes you think "mmm yummy" and make some asap, you'll love it =D
