That's probably because you just doubleclicked on the application, which does not work for the dedicated server. Follow the instructions:
"If you're in Mac OS X, open the application Terminal which can be found in Utilities in the Applications folder. Type "cd " there (without the quotes, and note the space immediately after cd) and drop the folder containing the dedicated server on the window. You should now see something like "cd /Users/username/Desktop/Armagetron\ Advanced\ Dedicated/ " if the folder is located on your desktop. Run it by pressing enter or return."
Yeah, Mac users got the very short end of the stick when it comes to convenience here

An installer for the launchd script would make it very simple, but I'll leave that for later…

You already asked that. Also read the Firewall and Port Forwarding sections on the linked page there, you'll probably need them. And really, please read the FAQ before the next question.
