Oh, I was just about to reply to the PM....
Yeah, see, one doesn't "swallow up" in that context. What you did was roughly equivalent to saying you sweat into your pores. Swallowing, by definition, only goes down. If swallow is followed by an up, it still means the same thing as swallow by itself, as in to eat up or gobble up. That usage would be something of a colloquialism. Either way, it's going down—even if it says up.
What you wanted to say was that you nearly choked on your water, or [spit/spat] [up/out] your water.
In other contexts, "swallow up" can mean to enclose or envelop completely, as if by swallowing. "The huge waves swallowed the small boat and it sank shortly thereafter."
