Hmm yeah good thinking, how important is speed? I mean, you want to get the first hit in the first fight, but do all my pokemon need to be have high speed stats?
And yeah, no limit to the hours. But frankly, I don't think I'm as committed as the others... I got better things to do... A whole week is a long amount of time to lose to Pokemon! So I don't stand much chance unless I have some super great tactic, or I just cheat

Catch and abra, teleport from a long distance trainer, challenge another trainer that has a slowpoke last, return to the route the trainer was on, capture Mew.
Alternatively, if you are farther into the game. You can face any trainer instead of one that has a slowpoke, then just face a wild slowpoke and fly back.

Speed isn't completely vital. Speed has a lot more better qualities though in RBY because of that fact it adds to your critical hit rate. Not vital, but extremely helpful. Thank you for some brilliant suggestions! Here are my current thoughts regarding line-ups:
Psychic Pokemon are hard to counter, other than vs. other psychic pokemon. So I'm thinking a few dual Psychic/other-element Pokemon could give me an advantage
Strategy wise, Paralyse and Frozen are the most effective statuses you can afflict. All of these Pokemon can do all of those things, plus high Special Attack
Mewtwo - We might ban this guy as he is OP, but if not then he's gotta be in
Exeggutor - High Special Attack, super cool looking Pokemon, Leaf and Psychic
Cloyster - Water and Ice, very high defence
Starmie - High Speed, Water and Psychic
Mew (?) - Third strongest Pokemon, can catch at level 7 early on!
Chansey - Super high HP, Softboiled + Thunder Wave + Ice Beam = Frozen, Paralyzed, and mass HP healed in no time
Other thoughts:
Should I get a Rock Pokemon? Golem? Rhydon?
Leaf Pokemon?
I should probably have my starter Pokemon in there due to lack of time to train. Venusaur? Charizard?
Electric worth it? Zapdos? Jolteon?

I would add a physical based attacker in there. And cloyster has low hp, so although he might be good defensively he isn't great because of his hp stat. I say Rhydon in place of cloyster that way you have both a physical wall and physical attacker with decent hp.

Tauros is the undisputed king of RBY—at least since Mewtwo and Mew got banned. As a Normal-type, it has an amazing STAB Hyper Beam, but the real reason for Tauros's place at the top is Body Slam. Tauros gets a critical hit over 20% of the time, and although very little can take a critical hit Body Slam and a Hyper Beam, the real threat is the paralysis chance. Paralysis is precious in RBY; people will do everything they can to stop you from spreading it any further than their Chansey or maybe their Exeggutor. Neither is a wise switch into Tauros.

If I remember, all normal moves in RBY were physical (attack stat). Has good speed, good attack, good defense. On top of that, hyper beam when it KOs a pokemon in RBY, makes the pokemon not have to recharge.
Oh, also, not sure if you know this or not, but it's STAB (Same Type Attack Boost/Bonus). Gives a 50% increase to the base power of any attack when it's the same type as the pokemon using it. Hyper beam is the strongest attack in RBY (iirc), and because of that + a kill on the use of it makes it extremely OP.
Just add some coverage moves for various other types and you're set. Body Slam + Hyper Beam + two coverage moves (most common is Earthquake and something else).
