Php/General - PHP Rocks!
It's (php) easy to deal with, runs from anywhere on the server as long as permissions are correct and integrates well with flash. I have used it many times for simple things like contact page back-ends, live flash counters (see my main site), forums, guestbooks, image galleries, games and a whole lot more.
